quick, easy, delicious...

2 tablespoons butter
1 small onion, diced
3 cans chicken broth (or 1 large can)
2 cans whole kernel corn
2 cans new potatoes, diced or sliced
1 red pepper, diced
2 cups milk
1 cup cheddar cheese, grated
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
smoked beef sausage (I use Hillshire Farms brand)

melt butter, add onion, cook 5 minutes
stir in chicken broth, vegetables and cooked sausage
bring to boil, reduce heat, simmer covered for 30 minutes or more...
in a separate saucepan gradually warm the milk and melt the cheese
stir in seasonings
stir in milk/melted cheese
simmer covered for 10 minutes

I think this would also be good with chicken substituted for the sausage..

I saved the juices from the last 3 roast beefs and used that instead of the chicken broth when I made this tonight. .turned out great
