The US Coast Guard has boats this size designed to handle this but I can't tell if this is one of them. They better get into deeper water and away from those rocks though or the ability to temporarily be a submarine won't matter.

As long as there is enough balance in the hull to right it afterwards, and said hull is sealed, it is quite plausible.
There are many boats that will continue to remain buoyant when completely filled with water.
I do hope the crew was below deck and strapped in when she went end over.

I will agree though the rocks are a hazard regardless of hull composition, if she takes a flip on those it would likely be her last...

A few years ago the police in Wellington NZ got a new harbour launch and one of the tests they did to it was to flip it over with a crane and drop it into the water upside down - it had to self-right within a certain time.
